Let’s Get Baking!

Did you know that baking has been found to have a therapeutic value which helps ease depression and anxiety? Good news for all of us coping with the pandemic! Baking is meditative, stimulates the senses, is highly creative, and if giving baked goods away, makes EVERYONE happy!! I have baked weekly for others and found it very therapeutic! My latest baking is for the employees at my daughter’s King Soopers where she works! Let’s spread some baking cheer! Here is my most requested cookie recipe which is also fairly healthy!!

Greek Yogurt, Oatmeal Chocolate Chip Cookies

Ingredients:

  1. ½ cup brown sugar;
  2. 1 stick butter;
  3. 4 ounces greek yogurt (I use vanilla flavored);
  4. 2 eggs;
  5. 1 cup flour;
  6. 3 cups oatmeal;
  7. 2 cups chocolate (I use 1 cup milk chocolate and 1 cup semi-sweet- chopped or chips);
  8. 1 cup nuts if desired.

Melt the butter. Mix ingredients #1-4. Add in the flour and oatmeal and mix well. Fold in the chocolate. Refrigerate for 20 minutes or more. Bake on cookie sheet at 350 for 8 minutes or so. Don’t overbake. They should look slightly undone when you pull them out of the oven. Enjoy!! The high temp of the oven is said to kill germs, so put them on a plate and leave on them someone’s doorstep!
